After graduating with a degree in exercise science, Emi Jacobson joined professional running team, Minnesota Distance Elite in 2018. She trained and competed at an elite level for six years while completing her master’s degree in nutrition and dietetics.
Emi’s passion for nutrition was shaped by her love of homegrown food and her personal journey of overcoming low energy and disordered eating in college. Through her own pursuit of better health, she discovered how valuable — and often inaccessible — quality nutrition support can be.
